I'm sorry I haven't blogged in a few days...I had a wonderful Labor Day weekend at the lake with my family friends :) Hope you all had a great weekend! Here is a delicious recipe that starts with a simple hamburger patty...then, it becomes extra-special and tasty with the toppings you can add to it :) The Parmesan Roasted Potatoes make a great side for this dish.


PATTY MELTS:

1 lb. ground sirloin

1 lb. ground chuck

½ cup oatmeal or breadcrumbs

1 egg

1 teaspoon each of garlic powder, onion powder, salt, pepper and Cajun seasoning

1 teaspoon Dijon mustard

1 teaspoon Worcestershire

1 can Cream of Mushroom Soup

½ cup whole milk

1 teaspoon Cajun seasoning

Chopped tomatoes

Chopped green onions

Sharp cheddar, grated

In a small pot, mix soup, milk and Cajun seasoning.   Let simmer on low while you make the patties and cook them.   Mix first 7 ingredients together and form into 6 or 7 patties.  Grill 5 minutes on each side on high heat.  Transfer patties to a platter and cover with foil for 10 minutes.  To assemble:  place a patty on a plate, spoon a generous amount of soup over patty, then sprinkle tomato, green onions and cheese over soup.  Delicious J
ROASTED PARMESAN POTATOES:
1 ½ pounds small red potatoes, slice about ½ “
4 tablespoons olive oil
1 cup shredded Parmesan cheese
½ cup seasoned bread crumbs
¼ cup fresh parsley, chopped
1 teaspoon each of salt and pepper
Place oil, cheese, bread crumbs, parsley and salt and pepper in a large bowl and mix well.  Toss potatoes in the mixture and make sure potatoes are coated well.  Place potatoes on a large jelly-roll baking pan that has been sprayed with cooking spray and bake at 375 for 30 minutes or until done.  I like to broil mine for about 1 minute at the end.  Watch it closely, though J
